Description
These crispy baked ground turkey tacos are stuffed with a flavorful turkey and black bean mix and served with a creamy avocado sauce for dipping or drizzling.
Ingredients
FOR THE SAUCE:
– 1/2 avocado
– 1/4 cup sour cream or Greek yogurt
– 1 tbsp lime or lemon juice
– 1/4 cup cilantro
– 1/2 tsp kosher salt
– 2 tbsp water (adjust as needed)
FOR THE FILLING:
– 2 tsp avocado oil or olive oil
– 8 oz lean ground turkey
– 2 1/2 tsp taco seasoning (see below or store-bought)
– 1/3 cup chopped onion
– 3/4 cup canned black beans (drained)
– 4 oz green chiles
– 2 tbsp chopped cilantro
FOR THE TACO SEASONING:
– 1/2 tsp cumin
– 1/2 tsp oregano
– 1/2 tsp garlic powder
– 1/2 tsp kosher salt
– 1/4 tsp smoked paprika
– 1/4 tsp chili powder
– 1/8 tsp cayenne (optional)
FOR THE TACOS:
– 6 fajita-sized flour tortillas
– 1 1/2 cups shredded Monterey Jack cheese
– Cooking spray or avocado oil for brushing
Instructions
1. Make the avocado sauce: blend all sauce ingredients until smooth. Chill until ready to serve.
2. Heat oil in skillet. Add turkey, taco seasoning, and onions. Cook 4-5 minutes until browned.
3. Stir in black beans, green chiles, remaining seasoning, water, and cilantro. Simmer 15 minutes uncovered.
4. Preheat oven to 425°F. Arrange tortillas on greased baking sheet. Add cheese and filling to half of each.
5. Bake 1-2 minutes to melt cheese. Fold in half, brush tops with oil, and bake 10-12 minutes until crispy.
6. Serve hot with avocado sauce for dipping or drizzling.
Notes
For extra crispy tacos, flip halfway through baking.
Use Greek yogurt in place of sour cream for a lighter sauce.
Filling can be made ahead and stored up to 3 days in the fridge.
Turkey filling freezes well. Assemble tacos fresh when ready.
