- 1 lb ground beef (preferably grass-fed)
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 6–8 corn tortillas (freshly made preferred)
- Fresh cilantro, finely chopped
- 1 lime, cut into wedges
- Diced avocado (optional)
- Crumbled feta cheese (or cotija)
Instructions
- In a skillet over medium heat, add the ground beef. Cook until browned, about 6–8 minutes, breaking up clumps for even cooking.
- Season beef with cumin, smoked paprika, salt, and pepper, stirring well to blend the spices.
- In a separate small saucepan, combine olive oil and apple cider vinegar, warming gently to create a light vinaigrette.
- Remove cooked beef from the skillet and allow it to rest. Use the same skillet to heat corn tortillas on each side until golden and slightly crisp, about 1–2 minutes per side.
- Assemble each taco with seasoned beef, drizzle vinaigrette, and top with chopped cilantro, diced avocado, and crumbled cheese.
- Serve with lime wedges to enhance flavors.
Notes
For an elegant serving, place tacos on a rustic wooden board and garnish with lime wedges. Store leftover beef and toppings separately.
