Description

Delightful tacos with crispy shells, savory ground beef, and melted cheese.


Ingredients

  • 1 lb ground beef (preferably grass-fed)
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper (to taste)
  • 8 oz shredded cheese (a blend of cheddar and Monterey Jack)
  • 1 tbsp olive oil
  • 8 taco shells (preferably homemade)
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1/2 cup sour cream
  • Fresh cilantro, chopped (optional)

Instructions

  1. In a skillet, heat olive oil over medium-high heat. Add ground beef and season with chili powder, cumin, salt, and pepper. Cook until browned, about 8-10 minutes.
  2. Stir occasionally, breaking up the meat as it browns. Once fully cooked, deglaze the pan with a splash of water, scraping up any flavorful bits from the bottom.
  3. Reduce heat to low. Sprinkle shredded cheese over the beef mixture. Cover the skillet until the cheese is melted, about 2-3 minutes.
  4. While the cheese melts, warm taco shells according to package instructions.
  5. Fill each taco shell generously with the cheesy beef mixture. Top with shredded lettuce, diced tomatoes, a dollop of sour cream, and fresh cilantro.

Notes

Store the filling and shells separately to maintain crispness. Reheat filling gently before serving.
