Ingredients

- 1 lb ground beef (preferably grass-fed)
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper (to taste)
- 8 oz shredded cheese (a blend of cheddar and Monterey Jack)
- 1 tbsp olive oil
- 8 taco shells (preferably homemade)
- 1 cup shredded lettuce
- 1 medium tomato, diced
- 1/2 cup sour cream
- Fresh cilantro, chopped (optional)
Instructions
- In a skillet, heat olive oil over medium-high heat. Add ground beef and season with chili powder, cumin, salt, and pepper. Cook until browned, about 8-10 minutes.
- Stir occasionally, breaking up the meat as it browns. Once fully cooked, deglaze the pan with a splash of water, scraping up any flavorful bits from the bottom.
- Reduce heat to low. Sprinkle shredded cheese over the beef mixture. Cover the skillet until the cheese is melted, about 2-3 minutes.
- While the cheese melts, warm taco shells according to package instructions.
- Fill each taco shell generously with the cheesy beef mixture. Top with shredded lettuce, diced tomatoes, a dollop of sour cream, and fresh cilantro.
Notes
Store the filling and shells separately to maintain crispness. Reheat filling gently before serving.
