These Crispy Smashed Carrots are roasted to golden perfection with garlic and butter. A crunchy, flavorful veggie side that’s simple and satisfying.
Ingredients
1 pound of fresh carrots, peeled
2 tablespoons olive oil
2 tablespoons butter, softened
3 cloves garlic, minced
Salt and pepper to taste
Fresh parsley, chopped (optional)
Instructions
1. Preheat oven to 425°F (220°C).
2. Boil peeled carrots in salted water for 10–15 minutes until fork-tender.
3. Drain and let carrots cool slightly.
4. Drizzle olive oil and butter on a baking sheet.
5. Place carrots on sheet and smash gently with a glass.
6. Sprinkle minced garlic, salt, and pepper evenly over carrots.
7. Roast in the oven for 20–25 minutes until crispy and golden.
8. Garnish with fresh parsley and serve hot.
Notes
Don’t overcook carrots during boiling—they should be soft but still hold shape when smashed.
Try adding a pinch of red pepper flakes or herbs like rosemary for variation.
Leftovers reheat best in the oven to keep their crisp.
