Description

A delightful twist on traditional pecan pie, these cookies combine buttery flavors with a sweet pecan pie filling, perfect for any occasion.


Ingredients

  • 1/2 cup butter (softened)
  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1 tsp vanilla extract (for filling)
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter, oil, granulated sugar, and powdered sugar in a large mixing bowl until smooth.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the flour, salt, and baking powder, mixing until just combined.
  5. Scoop out nine equal cookie balls and arrange on the prepared baking sheet, flattening each to about 1 inch thick.
  6. Press down in the center of each cookie with a 1/4 measuring cup to create space for the pecan pie filling.
  7. Bake for 8-9 minutes and let cool on the baking sheet.
  8. Prepare the pecan pie filling while the cookies cool.

Notes

Use room temperature ingredients for better mixing. Avoid overmixing the dough to prevent tough cookies.
