- 1 can chickpeas, drained and rinsed (preferably organic)
- 2 cups mixed salad greens
- 2 tablespoons fresh lime juice
- 1 tablespoon fish sauce (or soy sauce for a vegetarian option)
- 1 tablespoon honey (or agave syrup)
- 1 teaspoon chili garlic sauce
- Zest of 1 lime
- 1/4 cup fresh cilantro, finely chopped
- 1/4 cup roasted peanuts, roughly chopped
- 1/4 cup red bell pepper, finely diced
Instructions
- Drain and rinse the chickpeas in cold water. Pat them dry with a clean kitchen towel.
- In a medium bowl, whisk together the lime juice, fish sauce, honey, chili garlic sauce, and lime zest until fully combined. Adjust sweetness and spice to taste.
- In a large mixing bowl, combine the chickpeas, mixed greens, red bell pepper, and cilantro.
- Drizzle the prepared dressing over the salad and gently toss to coat evenly.
- Sprinkle the roasted peanuts on top for an appealing crunch.
