Ingredients

  • 1 can chickpeas, drained and rinsed (preferably organic)
  • 2 cups mixed salad greens
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fish sauce (or soy sauce for a vegetarian option)
  • 1 tablespoon honey (or agave syrup)
  • 1 teaspoon chili garlic sauce
  • Zest of 1 lime
  • 1/4 cup fresh cilantro, finely chopped
  • 1/4 cup roasted peanuts, roughly chopped
  • 1/4 cup red bell pepper, finely diced

Instructions

  1. Drain and rinse the chickpeas in cold water. Pat them dry with a clean kitchen towel.
  2. In a medium bowl, whisk together the lime juice, fish sauce, honey, chili garlic sauce, and lime zest until fully combined. Adjust sweetness and spice to taste.
  3. In a large mixing bowl, combine the chickpeas, mixed greens, red bell pepper, and cilantro.
