Description
A protein-packed, flavor-loaded quiche without the crust! Made with creamy cottage cheese, fresh spinach, and simple seasonings, it’s a perfect meal for any time of day.
Ingredients
1 tablespoon olive oil
1 small onion, diced
1/2 bell pepper, diced
2 cups fresh baby spinach, chopped
1 1/2 cups cottage cheese
4 large eggs
1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
1/2 cup milk
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
Salt and pepper to taste
Cooking spray or oil for greasing
Instructions
1. Preheat oven to 350°F (175°C).
2. In a skillet, heat olive oil over medium heat. Add onion and bell pepper; sauté for 3–4 minutes until soft.
3. Stir in chopped spinach and cook for 2–3 minutes until wilted. Season with garlic powder, salt, and pepper.
4. In a bowl, whisk together eggs, cottage cheese, milk, and Italian seasoning. Season lightly with salt and pepper.
5. Fold in sautéed vegetables and shredded cheese until combined.
6. Grease a baking dish and pour in the mixture evenly.
7. Bake for 40–45 minutes until golden and set in the center.
8. Let cool 5–10 minutes before slicing and serving.
Notes
You can use frozen spinach—just thaw and drain it thoroughly.
Try mixing in mushrooms, tomatoes, or feta for variation.
Make it the night before and bake in the morning for a ready-to-go breakfast.
