- 1 cup quinoa, rinsed and drained
- 1 cup dark chocolate (minimum 70% cocoa), finely chopped
- 1 tablespoon coconut oil, melted

- Dried fruit (cranberries or apricots, optional)
Instructions
- In a medium saucepan, combine quinoa with two cups of water. Bring to a boil, then reduce heat and cover. Simmer for approximately 15 minutes until the quinoa is tender and water is absorbed.
- In a heatproof bowl, combine the chopped dark chocolate and melted coconut oil. Place over a pot of simmering water, stirring frequently until melted and smooth.
- In a large mixing bowl, fold the cooked quinoa into the melted chocolate mixture until fully coated.
- Spoon the mixture onto a parchment-lined baking sheet, shaping into small clusters, leaving some space between each cluster.
- Place in the refrigerator for at least 30 minutes to allow the chocolate to harden.
Notes
Store in an airtight container at room temperature for up to one week. Experiment with different cocoa percentages and nut toppings for variety.
