- 4 bone-in, skin-on chicken thighs (about 1.2 lb)
- 1 tbsp extra-virgin olive oil
- 2 tbsp fresh lemon juice (about 1 lemon)
- 3 cloves garlic, finely minced
- 1 tsp dried oregano (or 1 tbsp fresh, finely chopped)
- 1/2 tsp fine sea salt (plus extra to taste)
- 1/4 tsp freshly cracked black pepper
- 2 tbsp dry white wine or low-sodium chicken stock
- 2 tbsp unsalted butter, cold (optional)
- 1/3 cup crumbled feta
- 2 tbsp fresh parsley, finely chopped
- 1/4 cup pitted Kalamata olives, halved (optional)
- Lemon zest from 1 lemon
Instructions
- Preheat the oven to 425°F (220°C). Pat the chicken very dry with paper towels and season both sides with salt and pepper.
- In a small bowl, whisk lemon juice, minced garlic, oregano, and olive oil until emulsified. Add a pinch of lemon zest into the mix.
- Heat an ovenproof skillet over medium-high heat, add 1 tbsp olive oil, and place thighs skin-side down. Sear until golden-brown for 6–8 minutes.
- Flip the thighs, brush with half the marinade, and transfer the skillet to the oven. Roast until the internal temperature is 165°F (74°C), about 12–15 minutes.
- Remove from the oven and let rest for 5 minutes. Tent with foil to keep warm.
- Deglaze the skillet with wine or stock, scraping brown bits, and simmer for 1–2 minutes. Whisk in cold butter (if using) and stir in remaining marinade.
- Spoon sauce over the chicken and top with feta, parsley, olives, and lemon zest. Serve immediately.
