Ingredients

  • 4 bone-in, skin-on chicken thighs (about 1.2 lb)
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice (about 1 lemon)
  • 3 cloves garlic, finely minced
  • 1 tsp dried oregano (or 1 tbsp fresh, finely chopped)
  • 1/2 tsp fine sea salt (plus extra to taste)
  • 1/4 tsp freshly cracked black pepper
  • 2 tbsp dry white wine or low-sodium chicken stock
  • 2 tbsp unsalted butter, cold (optional)
  • 1/3 cup crumbled feta
  • 2 tbsp fresh parsley, finely chopped
  • 1/4 cup pitted Kalamata olives, halved (optional)
  • Lemon zest from 1 lemon

Instructions

  1. Preheat the oven to 425°F (220°C). Pat the chicken very dry with paper towels and season both sides with salt and pepper.
  2. In a small bowl, whisk lemon juice, minced garlic, oregano, and olive oil until emulsified. Add a pinch of lemon zest into the mix.
  3. Heat an ovenproof skillet over medium-high heat, add 1 tbsp olive oil, and place thighs skin-side down. Sear until golden-brown for 6–8 minutes.
  4. Flip the thighs, brush with half the marinade, and transfer the skillet to the oven. Roast until the internal temperature is 165°F (74°C), about 12–15 minutes.
  5. Remove from the oven and let rest for 5 minutes. Tent with foil to keep warm.
  6. Deglaze the skillet with wine or stock, scraping brown bits, and simmer for 1–2 minutes. Whisk in cold butter (if using) and stir in remaining marinade.
  7. Spoon sauce over the chicken and top with feta, parsley, olives, and lemon zest. Serve immediately.

Let chicken rest to ensure tender, moist meat. For a crispy finish, consider high-quality olive oil as a finishing touch.
