Description

Create three delightful cookie varieties using one versatile dough, perfect for gatherings and satisfying multiple cravings.


Ingredients

  • 400 g unsalted butter, softened
  • 225 g powdered sugar
  • 16 g vanilla sugar
  • 0.2 g salt
  • 2 large eggs
  • 10 g baking powder
  • 900 g all-purpose flour
  • 15 g ground pistachios
  • Zest of 1 lemon
  • 5 g cocoa powder
  • 30 g chopped hazelnuts
  • 125 g coarsely ground peanuts
  • 1 egg white
  • 30 g granulated sugar
  • 60 g strawberry jam
  • 100 g white chocolate
  • 250 g milk chocolate
  • 15 ml sunflower oil
  • Chopped pistachios, for garnish
  • Edible rose petals, for garnish

Instructions

  1. In a deep bowl, combine softened butter, powdered sugar, vanilla sugar, and salt. Mix until smooth and creamy.
  2. Crack the eggs one by one into the bowl, mixing well after each addition.
  3. Add baking powder and flour to the mixture and knead it until you achieve a smooth dough.
  4. Divide the dough into three equal portions, about 540 grams each.
  5. For Pistachio-Lemon Cookies, mix one portion with ground pistachios and lemon zest. Roll out to 0.5 cm thick and cut shapes.
  6. For Chocolate Cookies, mix the second portion with cocoa powder and shape into sticks, placing them on a baking tray.
  7. For Peanut Cookies, roll small balls of the last portion, flatten slightly, and coat with egg white and chopped peanuts.
  8. Prepare strawberry jam by cooking sugar with it until dissolved. Cool and pipe into cookies.
  9. Preheat oven to 190°C (375°F) and bake cookies for 10-15 minutes.
  10. After cooling, fill peanut cookie indents with jam.
  11. Melt white chocolate and dip half of pistachio cookies, drizzle remaining chocolate, and garnish.
  12. Melt milk chocolate with oil and coat all cookies, setting them on parchment paper.
  13. Once chocolate hardens, serve and enjoy your three cookie varieties!

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze with parchment paper between layers.
