Ingredients

  • 1 cup dill pickle juice (well-chilled)
  • 1 tablespoon sugar (granulated)
  • 1 tablespoon baking powder
  • 1 teaspoon salt (Kosher)
  • 1/4 cup unsalted butter (room temperature)
  • 1/2 cup dill pickles (finely chopped)
  • Optional: 2 tablespoons fresh dill (finely chopped)
  • Optional: Sea salt (for sprinkling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. Gradually add dill pickle juice and softened butter, mixing until just combined.
  4. Fold in chopped dill pickles gently.
  5. Pour batter into a greased loaf pan and smooth the top.
  6. Bake for 40-45 minutes until golden brown and a toothpick comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack. Optionally sprinkle with fresh dill and sea salt.
