- 1 cup dill pickle juice (well-chilled)
- 1 tablespoon sugar (granulated)
- 1 tablespoon baking powder
- 1 teaspoon salt (Kosher)
- 1/4 cup unsalted butter (room temperature)
- 1/2 cup dill pickles (finely chopped)
- Optional: 2 tablespoons fresh dill (finely chopped)
- Optional: Sea salt (for sprinkling)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- Gradually add dill pickle juice and softened butter, mixing until just combined.
- Fold in chopped dill pickles gently.
- Pour batter into a greased loaf pan and smooth the top.
- Bake for 40-45 minutes until golden brown and a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack. Optionally sprinkle with fresh dill and sea salt.
