- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon (optional)
- 1/2 cup brown sugar
- 2 eggs
- 1/2 cup melted butter
- 1 teaspoon vanilla extract
- 1 1/2 cups chopped dates (Medjool or Deglet Noor)
- 1 cup chopped walnuts (or nuts of choice)
Instructions
- Preheat the oven to 350°F (175°C).
- Pit and chop dates, soaking them in warm water or coffee for 10-15 minutes.
- In a mixing bowl, combine flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together eggs, melted butter, brown sugar, and vanilla extract.
- Gradually incorporate the wet mixture into the dry ingredients, being careful not to overmix.
- Gently fold in the chopped dates and nuts until just combined.
- Pour the batter into a lined loaf pan.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Let cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
Notes
For a vegan option, replace eggs with flaxseed eggs and use plant-based butter. For gluten-free bread, substitute all-purpose flour with a gluten-free blend.
