- 1 cup Ditalini Pasta
- 4 cups Chicken Broth
- 1 cup Diced Tomatoes
- 2 cloves Garlic
- 1 medium Onion
- 1/4 cup Parmesan Cheese
- 2 tbsp Olive Oil
- Fresh Basil (handful)
Instructions
- Prep by chopping onions and mincing garlic.
- Boil ditalini in salted water until al dente, then drain and set aside.
- In a pot, heat olive oil and sauté garlic and onions until fragrant.
- Add diced tomatoes and cook for a few minutes.
- Pour in chicken broth and simmer for 15 minutes.
- Stir in cooked ditalini, sprinkle with Parmesan and fresh basil before serving.
Notes
For a vegetarian option, use vegetable broth and skip the cheese. Feel free to add cooked sausage or spinach for variations.
