Description

An easy one-dish meal that mixes tender chicken, fluffy rice, and cool tzatziki for fast, tasty dinners.


Ingredients

  • 2 chicken breasts (boneless, skinless)
  • 1 cup dry rice (long-grain or your favorite)
  • 1 cup tzatziki sauce (store-bought or homemade)
  • 2 tablespoons olive oil
  • 1 clove garlic, minced (or 1/2 teaspoon garlic powder)
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs (dill or parsley) for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the rice in a medium baking dish in an even layer.
  3. Lay the chicken breasts on top of the rice.
  4. Mix the tzatziki, olive oil, minced garlic, lemon juice, salt, and pepper in a bowl until smooth.
  5. Pour the sauce over the chicken and rice.
  6. Cover the dish tightly with aluminum foil.
  7. Bake for 30–40 minutes, until the chicken reaches 165°F (74°C) and the rice is tender.
  8. Remove from oven, uncover, and let rest for 5 minutes before serving.

Notes

Use rinsed rice if preferred; adjust salt depending on the tzatziki salt level.
