- 2 chicken breasts (boneless, skinless)
- 1 cup dry rice (long-grain or your favorite)
- 1 cup tzatziki sauce (store-bought or homemade)
- 2 tablespoons olive oil
- 1 clove garlic, minced (or 1/2 teaspoon garlic powder)
- 1 tablespoon lemon juice
- Salt, to taste
- Black pepper, to taste
- Fresh herbs (dill or parsley) for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Place the rice in a medium baking dish in an even layer.
- Lay the chicken breasts on top of the rice.
- Mix the tzatziki, olive oil, minced garlic, lemon juice, salt, and pepper in a bowl until smooth.
- Pour the sauce over the chicken and rice.
- Cover the dish tightly with aluminum foil.
- Bake for 30–40 minutes, until the chicken reaches 165°F (74°C) and the rice is tender.
- Remove from oven, uncover, and let rest for 5 minutes before serving.
Notes
Use rinsed rice if preferred; adjust salt depending on the tzatziki salt level.
