Description

Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Olive oil
  • Fresh garlic, minced
  • Lime juice
  • Chipotle chili powder or adobo sauce
  • Smoked paprika
  • Ground cumin
  • Salt and black pepper
  • Ranch dressing
  • Chipotle peppers in adobo sauce
  • Lime juice
  • Garlic powder
  • Salt
  • Grilled chicken, sliced
  • Fresh chopped tomatoes
  • Diced red onion
  • Fresh cilantro leaves
  • Jalapeño slices or chopped green chili (optional)
  • Lettuce or spinach (optional)
  • Shredded cheese
  • Sliced avocado or guacamole
  • Cooked rice

Instructions

  1. Marinate the Chicken: Whisk together olive oil, lime juice, minced garlic, chipotle powder, smoked paprika, cumin, salt, and pepper. Coat chicken in marinade and let sit for at least 30 minutes.
  2. Grill the Chicken: Preheat grill to medium-high heat and cook marinated chicken until fully cooked. Let rest before slicing.
  3. Blend the Chipotle Ranch Sauce: Combine ranch dressing, chipotle peppers, lime juice, garlic powder, and salt in a blender. Blend until smooth.
  4. Assemble the Burrito: Warm tortillas. Place a scoop of rice on each tortilla, layer with grilled chicken, chopped veggies, cheese, and ranch sauce. Wrap tightly and enjoy.

Notes
