Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat until hot but not smoking.
- Add minced garlic and sliced mushrooms; cook until mushrooms are tender and garlic is fragrant, about 5 minutes.
- Toss in the fresh spinach and cook until it wilts down.

- In a baking dish, lay the chicken breasts flat on the bottom. Spread the sautéed spinach and mushroom mixture evenly over the chicken.
- Sprinkle grated Parmesan cheese generously on top.
- Bake for about 25-30 minutes or until the chicken is cooked through and no longer pink inside.
- Let the dish cool slightly before serving hot.
