Ingredients

- 28-ounce can of whole tomatoes, drained
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon white wine vinegar
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
- 3 10-inch flour tortillas
- 2 teaspoons olive oil
- 4 slices of mozzarella cheese
- 1 slice of cheddar cheese
- 4 large black olives
- 1/4 cup pizza sauce
- 2 tablespoons shredded mozzarella cheese
Instructions
- Prepare the Pizza Sauce: In a blender or food processor, combine the drained tomatoes, minced garlic, olive oil, white wine vinegar, dried oregano, salt, and pepper. Blend until smooth.
- Preheat the Oven: Set your oven to 400°F (200°C).
- Prepare the Tortillas: Brush each flour tortilla with olive oil on both sides.
- Build Your Pizzas: Place the tortillas on a baking sheet. Spread 1-2 tablespoons of pizza sauce over each tortilla. Layer with mozzarella cheese and a slice of cheddar.
- Create Faces: Use the black olives to create eyes or mouths.
- Top with Shredded Cheese: Sprinkle shredded mozzarella on top of your designs.
- Bake the Pizzas: Bake for 10-12 minutes or until the cheese is melted and bubbly, and the tortillas are golden brown.
- Cool and Serve: Allow mini pizzas to cool for a few minutes before slicing into quarters.
Notes
Leftover mini pizzas can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the oven at 350°F for about 5-8 minutes.
