Description

Fun and creative mini pizzas decorated for Halloween, perfect for parties and family dinners!


Ingredients

  • 28-ounce can of whole tomatoes, drained
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon white wine vinegar
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • 3 10-inch flour tortillas
  • 2 teaspoons olive oil
  • 4 slices of mozzarella cheese
  • 1 slice of cheddar cheese
  • 4 large black olives
  • 1/4 cup pizza sauce
  • 2 tablespoons shredded mozzarella cheese

Instructions

  1. Prepare the Pizza Sauce: In a blender or food processor, combine the drained tomatoes, minced garlic, olive oil, white wine vinegar, dried oregano, salt, and pepper. Blend until smooth.
  2. Preheat the Oven: Set your oven to 400°F (200°C).
  3. Prepare the Tortillas: Brush each flour tortilla with olive oil on both sides.
  4. Build Your Pizzas: Place the tortillas on a baking sheet. Spread 1-2 tablespoons of pizza sauce over each tortilla. Layer with mozzarella cheese and a slice of cheddar.
  5. Create Faces: Use the black olives to create eyes or mouths.
  6. Top with Shredded Cheese: Sprinkle shredded mozzarella on top of your designs.
  7. Bake the Pizzas: Bake for 10-12 minutes or until the cheese is melted and bubbly, and the tortillas are golden brown.
  8. Cool and Serve: Allow mini pizzas to cool for a few minutes before slicing into quarters.

Notes

Leftover mini pizzas can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the oven at 350°F for about 5-8 minutes.
