- 2 medium sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 6 large eggs
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup cooked sausage or bacon (optional)
- Fresh herbs (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for about 10 minutes, or until tender.
- In a bowl, whisk together the 6 large eggs, 1 cup of milk, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder.
- Grease a casserole dish and layer the cooked sweet potatoes at the bottom. Sprinkle the sausage or bacon over the sweet potatoes (if using).
- Pour the egg mixture over the sweet potato base and meat.
- Sprinkle the shredded cheese on top.
- Bake the casserole for 25-30 minutes, or until the eggs are set and the top is golden brown.
- Let it cool slightly before serving. Garnish with fresh herbs if desired.
Notes
This casserole can be made ahead by assembling it the night before and baking in the morning. Customize with your favorite veggies like spinach or bell peppers.
