Indulge in the luxurious flavors of Eggnog Snickerdoodle Sandwich Cookies, a refined treat that transforms the classic into an extraordinary dessert experience.

Ingredients

Scale
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup unsalted butter, room temperature
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, room temperature (for filling)
  • 2 cups powdered sugar
  • 1/4 cup eggnog
  • 1 teaspoon ground cinnamon (for filling)

Instructions

  1. In a bowl, whisk together flour, baking soda, cream of tartar, cinnamon, and nutmeg.
  2. In a separate mixing bowl, beat the room temperature butter and granulated sugar until light and fluffy, approximately 3 to 4 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
  4. Gradually mix in the dry ingredients to form a uniform dough.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  7. Scoop tablespoon-sized portions of dough, roll into balls, and coat in a mixture of sugar and cinnamon.
  8. Bake for 10 to 12 minutes until just set and golden on the edges.
  9. Prepare the filling by beating together butter, powdered sugar, eggnog, and cinnamon until creamy.
  10. Once cookies are cool, spread eggnog filling on one cookie and sandwich with another.

Notes

For an elegant presentation, dust with powdered sugar and garnish with a sprig of cinnamon or star anise.
