Instructions
- In a bowl, whisk together flour, baking soda, cream of tartar, cinnamon, and nutmeg.
- In a separate mixing bowl, beat the room temperature butter and granulated sugar until light and fluffy, approximately 3 to 4 minutes.
- Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
- Gradually mix in the dry ingredients to form a uniform dough.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
- Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
- Scoop tablespoon-sized portions of dough, roll into balls, and coat in a mixture of sugar and cinnamon.
- Bake for 10 to 12 minutes until just set and golden on the edges.
- Prepare the filling by beating together butter, powdered sugar, eggnog, and cinnamon until creamy.
- Once cookies are cool, spread eggnog filling on one cookie and sandwich with another.
