Description

A warm and cozy layered dessert featuring chocolate cake, tart cherries, and light whipped cream, perfect for family gatherings or special occasions.


Ingredients

  • 1 (9-inch) chocolate cake, baked and cooled (cut into 1-inch cubes)
  • 2 tablespoons cherry liqueur or cherry syrup (optional, for soaking)
  • 2 cups pitted cherries (fresh or thawed frozen)
  • 1/2 cup cherry pie filling or 1/3 cup sugar + 2 tablespoons water (if using fresh)
  • 2 cups vanilla pudding or pastry cream (made or instant)
  • 1 teaspoon vanilla extract (if making custard)
  • 2 cups heavy cream, chilled
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chocolate shavings or cocoa nibs
  • Fresh mint leaves (optional)

Instructions

  1. If baking a cake, preheat your oven as per the recipe and let the cake cool completely before cutting into cubes. If using store-bought cake, slice into cubes now.
  2. Warm cherries and pie filling in a small pot for 2–3 minutes. Stir in sugar to taste and set aside to cool.
  3. Prepare the custard or pudding by whisking until smooth, then chill slightly so it’s spreadable.
  4. Beat the chilled heavy cream with powdered sugar and vanilla until soft peaks form. Keep it cold until ready to assemble.
  5. In a large glass bowl or individual glasses, layer the cake cubes, drizzle with cherry liqueur or syrup, and spread pudding over it. Spoon on the cherries and repeat the layers until about 3/4 full. Finish with whipped cream.
  6. Garnish with chocolate shavings and mint if desired. Chill for at least 2 hours before serving.

Notes

Use unsalted butter for baking if making the cake from scratch. Chill mixing bowl and beaters for firmer whipped cream. This dessert is best served cold and not reheated.
