- 3 to 4 medium-sized tart apples (such as Granny Smith), peeled and thinly sliced
- 2 large eggs, room temperature
- 80 g (about ⅓ cup) granulated sugar
- 100 g (about ¾ cup) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 130 ml (about ½ cup) whole milk, lukewarm
- Powdered sugar for dusting (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat your oven to 180°C (350°F). Grease and line a 9-inch round cake pan with parchment paper.
- Peel and thinly slice the apples. Set aside in a bowl, squeezing lemon juice over them to prevent browning.
- In a large mixing bowl, whisk the eggs and sugar until frothy and pale. Incorporate vanilla extract and lemon zest.
- In a separate bowl, whisk together flour and baking powder. Gradually add to the egg mixture, alternating with the lukewarm milk, until just combined.
- Gently fold in the thin apple slices until well-coated.
- Pour the batter into the prepared pan and smooth the top. Bake for 35 to 40 minutes until a toothpick comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Serve warm with powdered sugar and fresh mint leaves. Best stored in an airtight container at room temperature for up to 2 days.
