Description

Ingredients

  • 3 to 4 medium-sized tart apples (such as Granny Smith), peeled and thinly sliced
  • 2 large eggs, room temperature
  • 80 g (about ⅓ cup) granulated sugar
  • 100 g (about ¾ cup) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 130 ml (about ½ cup) whole milk, lukewarm
  • Powdered sugar for dusting (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and line a 9-inch round cake pan with parchment paper.
  2. Peel and thinly slice the apples. Set aside in a bowl, squeezing lemon juice over them to prevent browning.
  3. In a large mixing bowl, whisk the eggs and sugar until frothy and pale. Incorporate vanilla extract and lemon zest.
  4. In a separate bowl, whisk together flour and baking powder. Gradually add to the egg mixture, alternating with the lukewarm milk, until just combined.
  5. Gently fold in the thin apple slices until well-coated.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 35 to 40 minutes until a toothpick comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Serve warm with powdered sugar and fresh mint leaves. Best stored in an airtight container at room temperature for up to 2 days.
