- 2 large flour tortillas (soft and pliable)
- 8 oz deli roast beef (thinly sliced)
- 1 cup beef broth (preferably low-sodium)
- 2 tablespoons Worcestershire sauce (for depth)
- ½ cup Swiss cheese (shredded)
- Fresh herbs (parsley or chives, finely chopped)
Instructions
- Prepare the Sauce: In a small saucepan, combine the beef broth and Worcestershire sauce. Heat over medium, allowing to simmer for about 5 minutes until warmed through.
- Assemble the Roll Ups: Lay a tortilla flat, distribute half the roast beef, sprinkle with a quarter of the cheese, add herbs, and roll tightly.
- Repeat with the second tortilla, ensuring all ingredients are used.
- Grill the Roll Ups: Heat a non-stick skillet over medium heat. Add roll ups seam-side down and grill for 3-4 minutes until golden brown. Flip and grill the other side for an additional 3-4 minutes.
- Slice and Serve: Remove from heat, cool slightly, and slice into pinwheels. Serve with warm dipping sauce.
Notes
For storage, wrap tightly in plastic wrap and refrigerate for up to three days. Reheat gently in a skillet.
