- 1 cup (225g) unsalted French butter, at room temperature
- ¾ cup (150g) granulated sugar
- 2 cups (250g) all-purpose flour
- 1 teaspoon kosher salt
- 1 teaspoon vanilla extract
- Coarse sea salt, for sprinkling
Instructions
- Cream the room temperature butter and granulated sugar together until light and fluffy, about 3-5 minutes.
- Sift the all-purpose flour and kosher salt together, then gradually add them to the creamed butter, folding gently until just combined.
- Add the vanilla extract and fold until evenly distributed; the dough should be smooth and slightly sticky.
- Shape the dough into a log, about 2 inches in diameter, wrap it in plastic wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Slice the chilled dough into ¼-inch thick rounds and arrange them on the baking sheet. Sprinkle coarse sea salt on top.
- Bake for 12-15 minutes, until the edges are light golden brown and the centers remain soft. Let them cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to one week. Freezing is possible for up to three months.
