Description

Ingredients

  • 1 tablespoon baking powder

  • ¼ teaspoon salt
  • ¾ cup rainbow sprinkles (for batter)
  • 1 cup unsalted butter (room temperature)
  • 4 cups powdered sugar (sifted)
  • 2 teaspoons vanilla extract
  • 2 tablespoons heavy cream (or more for consistency)
  • Additional rainbow sprinkles (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt until combined. Set aside.
  3. In a stand mixer, beat the room temperature butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, ensuring each is fully incorporated. Blend in the vanilla extract.
  5. Gradually add the flour mixture and milk to the butter mixture, alternating between wet and dry until just combined. Gently fold in sprinkles.
  6. Divide the batter evenly among the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pans for 10 minutes before transferring to wire racks.
  8. In a clean mixing bowl, beat the room temperature butter until creamy. Gradually incorporate sifted powdered sugar, mixing on low speed. Add vanilla extract and heavy cream, mixing until smooth and fluffy.
  9. Once the cakes are completely cooled, place one layer on a serving plate. Spread frosting atop, then repeat with second and third layers. Use remaining frosting to coat the sides and top of the cake.
  10. Adorn the top of the cake with a vibrant array of sprinkles.

Notes

For best results, use room temperature ingredients and avoid overmixing the batter. This cake can also be made ahead of time.
