Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a bowl, whisk together flour, baking powder, and salt until combined. Set aside.
- In a stand mixer, beat the room temperature butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, ensuring each is fully incorporated. Blend in the vanilla extract.
- Gradually add the flour mixture and milk to the butter mixture, alternating between wet and dry until just combined. Gently fold in sprinkles.
- Divide the batter evenly among the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pans for 10 minutes before transferring to wire racks.
- In a clean mixing bowl, beat the room temperature butter until creamy. Gradually incorporate sifted powdered sugar, mixing on low speed. Add vanilla extract and heavy cream, mixing until smooth and fluffy.
- Once the cakes are completely cooled, place one layer on a serving plate. Spread frosting atop, then repeat with second and third layers. Use remaining frosting to coat the sides and top of the cake.
- Adorn the top of the cake with a vibrant array of sprinkles.
Notes
For best results, use room temperature ingredients and avoid overmixing the batter. This cake can also be made ahead of time.
