Instructions
- Prep the Ingredients: Gather all your ingredients. Cut the beef stew meat into bite-sized pieces and halve the baby potatoes.
- (Optional) Parboil Potatoes: Parboil the potatoes for a few minutes for uniform cooking.
- Sear the Beef: Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides.
- Make the Garlic Butter Sauce: In a small bowl, mix together melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.
- Combine in Slow Cooker: Place halved potatoes and seared beef in the slow cooker. Pour garlic butter sauce on top and add beef broth.
- Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until beef is fork-tender.
- Rest Before Serving: Let the dish rest for about 10 minutes before serving.
