Elegant Garlic Butter Mushrooms with a glossy sheen and a rich flavor that makes for an impressive side dish or canapé.

- 1 lb (450 g) cremini or baby bella mushrooms, trimmed and halved if large
- 1 tbsp neutral oil (vegetable or grapeseed)
- 4 tbsp unsalted butter, room temperature
- 3–4 garlic cloves, finely minced
- 1 tsp fresh thyme leaves, finely chopped
- 1 tbsp lemon juice, freshly squeezed
- 2 tbsp fresh flat-leaf parsley, finely chopped
- Zest of 1/2 lemon
- Sea salt and freshly ground black pepper, to taste
Instructions
- Pat mushrooms dry with paper towels to remove surface moisture.
- Warm a large stainless-steel or cast-iron skillet over medium-high heat until hot. Add the neutral oil.
- Add mushrooms in a single layer and cook undisturbed for 3–4 minutes until golden brown. Flip and sear the other side.
- Push mushrooms to the edge of the pan, reduce heat to medium, and add the butter. Swirl frequently as the butter foams and browns.
- Deglaze the pan with lemon juice, scraping up browned bits.
- Stir in minced garlic and thyme, cooking for 30–45 seconds until fragrant.
- Remove from heat and stir in parsley and lemon zest. Adjust salt and pepper to taste.
Notes
Serve alongside roasted proteins or as a luxe canapé. Store in an airtight container in the refrigerator for up to 3 days.
