- 4 chicken breasts
- 4 medium potatoes, diced
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1 cup grated Parmesan cheese
- Fresh parsley, chopped for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the diced potatoes with olive oil, minced garlic, Italian seasoning, salt, and pepper until well coated.
- Spread the seasoned potatoes in a single layer on a baking sheet.
- Sprinkle salt and pepper on both sides of the chicken breasts and top with half of the Parmesan cheese.
- Place the chicken among the potatoes on the baking sheet.
- Drizzle a little extra olive oil over everything and sprinkle the remaining Parmesan cheese on top.
- Bake for 25-30 minutes, until the chicken is cooked through and the potatoes are tender and crispy.
- Garnish with fresh parsley before serving.
Notes
For extra seasoning, consider adding your favorite herbs or spices to the potatoes. You can double this recipe for larger gatherings.
