Ingredients
- Chicken drumsticks (about 8)
- Potatoes (4 medium, cut into wedges)
- Garlic, minced (4 cloves)
- Olive oil (3 tbsp)
- Salt (1 tsp)
- Pepper (1/2 tsp)
- Italian herbs (1 tsp)
- Parmesan cheese, grated (1/2 cup, freshly grated)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with foil or parchment.
- Combine minced garlic, olive oil, salt, pepper, and Italian herbs in a large bowl.
- Add the chicken drumsticks to the bowl and coat them thoroughly with the garlic mixture.
- Chop the potatoes into wedges and mix them with the remaining oil and garlic in the bowl.
- Arrange the chicken and potatoes on a baking sheet in a single layer.
- Sprinkle grated Parmesan cheese evenly over the chicken and potatoes.
- Bake for 35-40 minutes, or until the chicken is cooked through and the potatoes are tender.
- Serve hot, optionally broiling for 2-3 minutes for extra browning.
Notes
Pat the drumsticks dry before coating for extra-crispy skin. Use freshly grated Parmesan for best results.
