- 1.5 lb (about 700 g) large shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 lemon, zest and juice separated
- 3 tbsp unsalted butter, room temperature
- 4 cloves garlic, minced
- 1/2 cup finely grated Parmesan (plus extra for sprinkling)
- 2 tbsp fresh parsley, finely chopped
- 1/4 tsp crushed red pepper flakes (optional)
- Kosher salt and freshly ground black pepper, to taste
- Lemon zest for finishing
Instructions
- Preheat the oven to 425°F (220°C). Arrange a rimmed baking sheet with foil or oil.
- Toss the shrimp with olive oil, salt, pepper, and half the lemon zest.
- Spread the shrimp in a single layer on the baking sheet.
- Roast for 6–8 minutes until shrimp are opaque with golden edges.
- Melt the butter in a small skillet over medium heat, then add garlic until fragrant.
- Stir in Parmesan and lemon juice to form a glossy sauce.
- Return the shrimp to the pan and toss with the sauce.
- Finish with parsley, remaining lemon zest, and optional red pepper flakes.
- Taste and adjust seasoning before serving.
Notes
Pat shrimp dry for better browning and use fresh Parmesan for the best flavor.
