Description

A refined dish featuring roasted shrimp with a glossy, golden finish, enhanced by garlic, butter, and Parmesan.


Ingredients

  • 1.5 lb (about 700 g) large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 lemon, zest and juice separated
  • 3 tbsp unsalted butter, room temperature
  • 4 cloves garlic, minced
  • 1/2 cup finely grated Parmesan (plus extra for sprinkling)
  • 2 tbsp fresh parsley, finely chopped
  • 1/4 tsp crushed red pepper flakes (optional)
  • Kosher salt and freshly ground black pepper, to taste
  • Lemon zest for finishing

Instructions

  1. Preheat the oven to 425°F (220°C). Arrange a rimmed baking sheet with foil or oil.
  2. Toss the shrimp with olive oil, salt, pepper, and half the lemon zest.
  3. Spread the shrimp in a single layer on the baking sheet.
  4. Roast for 6–8 minutes until shrimp are opaque with golden edges.
  5. Melt the butter in a small skillet over medium heat, then add garlic until fragrant.
  6. Stir in Parmesan and lemon juice to form a glossy sauce.
  7. Return the shrimp to the pan and toss with the sauce.
  8. Finish with parsley, remaining lemon zest, and optional red pepper flakes.
  9. Taste and adjust seasoning before serving.

Notes

Pat shrimp dry for better browning and use fresh Parmesan for the best flavor.
