Description

Warm, crumbly cookies that capture the cozy comfort of coffee cake with a tender center and crunchy cinnamon streusel topping.


Ingredients

  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup (170 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1/2 cup sour cream or plain yogurt
  • 1/3 cup (65 g) light brown sugar, packed (for streusel)
  • 3 tbsp all-purpose flour (for streusel)
  • 1 tsp ground cinnamon (for streusel)
  • 3 tbsp cold unsalted butter, cut into small pieces (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter with granulated and brown sugar until creamy, about 2–3 minutes.
  4. Add eggs one at a time, then stir in vanilla and sour cream until smooth.
  5. Mix the dry ingredients into the wet just until combined.
  6. For the streusel, toss brown sugar, flour, and cinnamon together, then cut in the cold butter until it resembles coarse crumbs.
  7. Scoop tablespoon-sized mounds of dough onto the prepared sheets, spacing them about 2 inches apart; flatten each mound slightly.
  8. Sprinkle a pinch of streusel on top of each cookie, pressing lightly to adhere.
  9. Bake for 12–15 minutes, until the edges are set and tops look slightly cracked; cool on a wire rack for 10 minutes.

Notes

Use room-temperature eggs for a smoother dough. Do not overbake to maintain soft centers.
