Description
Warm, crumbly cookies that capture the cozy comfort of coffee cake with a tender center and crunchy cinnamon streusel topping.
Ingredients
Scale
- 2 1/4 cups (280 g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup (170 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 1/2 cup (100 g) light brown sugar, packed
- 2 large eggs, room temperature
- 2 tsp vanilla extract
- 1/2 cup sour cream or plain yogurt
- 1/3 cup (65 g) light brown sugar, packed (for streusel)
- 3 tbsp all-purpose flour (for streusel)
- 1 tsp ground cinnamon (for streusel)
- 3 tbsp cold unsalted butter, cut into small pieces (for streusel)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat the softened butter with granulated and brown sugar until creamy, about 2–3 minutes.
- Add eggs one at a time, then stir in vanilla and sour cream until smooth.
- Mix the dry ingredients into the wet just until combined.
- For the streusel, toss brown sugar, flour, and cinnamon together, then cut in the cold butter until it resembles coarse crumbs.
- Scoop tablespoon-sized mounds of dough onto the prepared sheets, spacing them about 2 inches apart; flatten each mound slightly.
- Sprinkle a pinch of streusel on top of each cookie, pressing lightly to adhere.
- Bake for 12–15 minutes, until the edges are set and tops look slightly cracked; cool on a wire rack for 10 minutes.
Notes
Use room-temperature eggs for a smoother dough. Do not overbake to maintain soft centers.
