Description

This Gingerbread Pudding Cake is a warm, gooey dessert filled with cozy spices and a magical pudding-like sauce that forms beneath the soft cake topping. Perfect for holidays or chilly nights!

**For the Gingerbread Cake:**

1 1/2 cups all-purpose flour (or gluten-free flour blend)

1 teaspoon baking soda

2 teaspoons ground ginger

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 teaspoon kosher salt

1/2 cup milk (room temperature)

1/2 cup molasses

1 large egg

4 tablespoons unsalted butter (softened)

1/3 cup granulated sugar

1/2 cup light brown sugar

**For the Pudding Sauce:**

1 tablespoon cornstarch

3/4 cup hot water

3 tablespoons unsalted butter


Instructions

1. Preheat oven to 350°F (175°C). Grease an 8-inch or 9-inch square baking pan.

2. In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.

3. In another bowl, mix molasses, milk, and egg until combined.

4. In a large bowl, cream softened butter with granulated sugar and brown sugar until fluffy.

5. Gradually add dry ingredients and wet ingredients to the creamed butter, alternating and mixing just until combined.

6. Pour batter into prepared pan and smooth out evenly.

7. In a separate bowl, mix brown sugar and cornstarch. Heat water and butter in a saucepan until butter melts.

8. Stir hot butter mixture into the brown sugar-cornstarch mixture until smooth.

9. Carefully pour pudding sauce over cake batter.

10. Bake 38–42 minutes, or until cake is set but pudding layer remains below.

11. Serve warm with whipped cream or vanilla ice cream.

Notes

Make sure milk and egg are room temperature for better mixing.

Avoid overmixing the batter to keep the cake light.

Store leftovers covered in the fridge for up to 3 days.

Reheat individual servings in the microwave or oven.

Can be made in ramekins for individual portions.
