- 8 oz semisweet chocolate, chopped
- 1/2 cup heavy cream (room temperature)
- 1/4 cup molasses
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
- 1 cup high-quality white chocolate, chopped
- 2 tablespoons crushed ginger snap cookies
Instructions
- In a heatproof bowl, combine the chopped semisweet chocolate and heavy cream over a pot of simmering water. Stir until melted and smooth.
- Remove from heat and whisk in the molasses, ground ginger, cinnamon, nutmeg, and a pinch of salt.
- Cover the bowl with plastic wrap and refrigerate for about two hours, or until the mixture is firm enough to scoop.
- Scoop out portions of the chilled mixture and roll into uniform balls, about one inch in diameter.
- Melt the white chocolate using the double-boiler method and let it cool slightly.
- Dip each truffle into the white chocolate, allowing excess to drip off. Place on a parchment-lined baking sheet.
- While the coating is still wet, sprinkle with crushed ginger snap cookies. Allow to set at room temperature.
Notes
Store truffles in an airtight container in the refrigerator. Optionally coat them on the day of serving for the best texture.
