Description

Delight in the rich flavors of espresso and chocolate with these gluten-free tiramisu brownies, featuring a fudgy brownie base topped with a creamy mascarpone layer.


Ingredients

  • 1/2 cup gluten-free all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tablespoon espresso powder
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup mascarpone cheese, room temperature
  • 3/4 cup heavy whipping cream, very cold
  • 1/3 cup powdered sugar
  • 1/4 cup brewed espresso or very strong coffee, cooled
  • Unsweetened cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
  2. Mix the melted butter and sugar in a medium bowl until smooth, then add the eggs one at a time, mixing until shiny.
  3. Stir in the vanilla extract to create a smooth batter.
  4. Combine the gluten-free flour, cocoa powder, and espresso powder in another bowl and whisk.
  5. Fold the dry mixture into the wet mixture until you have a thick batter, being careful not to overmix.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 20–25 minutes, or until the top looks set.
  8. Cool the brownies fully in the pan on a rack.
  9. Beat the mascarpone cheese with powdered sugar and vanilla until creamy.
  10. Whip the cold heavy cream to stiff peaks in a separate bowl.
  11. Fold the whipped cream into the mascarpone mixture gently.
  12. Stir the cooled brewed espresso into the cream mixture.
  13. Spread the tiramisu cream over the cooled brownie base evenly.
  14. Chill for at least 2 hours before slicing.
  15. Dust the top with unsweetened cocoa powder before serving.

Notes

For clean slices, serve chilled and use a hot knife.
