- 1 lb sirloin steak or steak tips, cut into bite-sized pieces
- Salt & black pepper, to taste
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 tbsp all-purpose flour
- 2 cups milk (whole milk or 2%)
- 1 cup beef broth
- 2 cups shredded sharp cheddar cheese
- 1 tsp Dijon mustard (optional)
- 1 tsp paprika
- 1 package (20 oz) cheese tortellini, fresh or refrigerated
- ½ cup shredded mozzarella cheese
- 2 tbsp chopped parsley
Instructions
- Preheat your oven to 375°F (190°C).
- Season the steak pieces with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and sear the steak for 2-3 minutes on each side until browned. Set aside.
- In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 30 seconds. Sprinkle in flour, cooking for another minute to create a roux.
- Gradually whisk in milk and beef broth until smooth. Stir in shredded cheddar cheese, Dijon mustard (if using), and paprika until melted and creamy.
- Cook the tortellini according to package instructions but slightly undercook them. Drain and toss with a bit of olive oil.
- Grease a 9×13-inch baking dish. Mix tortellini, seared steak, and cheese sauce together. Top with shredded mozzarella cheese.
- Bake uncovered for 20-25 minutes until cheese is bubbly and golden.
- Garnish with chopped parsley before serving.
Notes
Consider adding spinach or peas for extra nutrition. Substitute chicken or ground beef if preferred.
