Description

Transform classic burgers into a spooktacular dish perfect for Halloween celebrations, featuring juicy beef patties and creatively decorated brioche buns.


Ingredients

Scale
  • 200 ml warm water (not hotter than 40°C)
  • 3 tablespoons milk
  • 2 ½ tablespoons sugar
  • 1 packet dry yeast
  • 2 large eggs
  • 485 g all-purpose flour (Type 550)
  • 1 ½ teaspoons salt
  • 80 g soft unsalted butter
  • Sesame seeds (optional)
  • 1.2 kg shoulder beef (or ready-made ground beef)
  • 15 g salt
  • Pepper, to taste
  • Oil (for frying)
  • 8 slices of sandwich cheese
  • 16 green olives
  • 2 red bell peppers
  • 1 jar sandwich pickles
  • Ketchup
  • Lollo Rosso lettuce
  • Ruffled fries (for serving)

Instructions

  1. In a large bowl, combine warm water, milk, sugar, and dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.
  2. Add eggs, flour, salt, and softened butter to the yeast mixture. Mix until a dough forms.
  3. Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. Once risen, punch down the dough and divide it into equal pieces. Shape them into round buns and place them on a baking tray lined with parchment paper. Let them rest for another 30 minutes.
  6. Preheat your oven to 190°C (375°F).
  7. Brush the tops of the buns with an egg wash and sprinkle with sesame seeds if using. Bake for 15-20 minutes or until golden brown.
  8. While the buns are baking, season the beef with salt and pepper. Shape it into patties.
  9. Heat oil in a pan over medium-high heat. Cook the patties for about 5-7 minutes on each side or until nicely browned and cooked through.
  10. Cut the brioche buns in half. Place the beef patty on the bottom bun, add a slice of cheese, and top it with olives and pickles for decoration. Add lettuce and ketchup before placing the top bun.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Buns can be frozen for up to 3 months.
