Description

Ingredients

  • 2 large russet potatoes, peeled and cut into thick fries
  • 3 tablespoons olive oil
  • Sea salt, to taste
  • 1 cup tzatziki sauce
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh oregano, finely chopped

Instructions

  1. Rinse the cut potatoes under cold water to remove excess starch and pat them dry.
  2. Preheat the oven to 425°F (220°C).
  3. In a large bowl, combine the potatoes with olive oil and sea salt, ensuring each fry is coated.
  4. Spread the fries in a single layer on a baking sheet lined with parchment paper and bake for 30–35 minutes, turning halfway, until golden brown and crispy.
  5. Sprinkle with crumbled feta, parsley, and oregano while still hot.

Notes

For best results, choose russet potatoes for their high starch content. Don’t overcrowd the pan while baking.
