- 2 large russet potatoes, peeled and cut into thick fries
- 3 tablespoons olive oil
- Sea salt, to taste
- 1 cup tzatziki sauce
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh oregano, finely chopped
Instructions
- Rinse the cut potatoes under cold water to remove excess starch and pat them dry.
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the potatoes with olive oil and sea salt, ensuring each fry is coated.
- Spread the fries in a single layer on a baking sheet lined with parchment paper and bake for 30–35 minutes, turning halfway, until golden brown and crispy.
- Sprinkle with crumbled feta, parsley, and oregano while still hot.
Notes
For best results, choose russet potatoes for their high starch content. Don’t overcrowd the pan while baking.
