- 1 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs, room temperature
- 4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- ½ teaspoon lime zest, finely grated
- ½ cup freshly squeezed lime juice
- 1 cup white chocolate chips
- Green food coloring, gel or liquid, to desired color
Instructions
- In a large mixing bowl, beat the room temperature butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.
- Add eggs one at a time, mixing well after each addition. Blend in the lime zest.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Stir in the lime juice followed by green food coloring until the desired shade is achieved.
- Gently fold in the white chocolate chips.
- Cover and chill the dough in the refrigerator for at least 30 minutes.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop rounded spoonfuls of dough onto prepared sheets, spaced about 2 inches apart. Bake for 10-12 minutes, or until edges are golden.
- Allow cookies to cool on sheets for 5 minutes before transferring to wire racks to cool completely.
Notes
Use gel food coloring for vibrant color. Chilling the dough longer enhances flavor. Optional: add macadamia nuts for added crunch.
