- 4 large bell peppers (any color)
- 1 pound ground turkey (lean)
- 1 cup cooked brown rice
- 1 can (14.5 oz) diced tomatoes (drained)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (mozzarella or cheddar)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a large skillet, sauté the diced onion and minced garlic over medium heat until soft and translucent.
- Add the ground turkey and cook until browned and fully cooked.
- Mix in the cooked brown rice, drained diced tomatoes, Italian seasoning, salt, and pepper until well combined.
- Fill each bell pepper with the turkey mixture and top with shredded cheese.
- Place the stuffed peppers in a baking dish with a little water at the bottom, cover with foil, and bake for 30 minutes.
- Remove foil and continue baking for another 10 minutes, until the cheese is bubbly and the peppers are tender.
