Description

  • 2 medium sweet potatoes, peeled and diced (about 2 cups)
  • 2 medium zucchinis, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish with olive oil.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add diced onion and minced garlic and sauté for 3–4 minutes until soft and fragrant.
  3. Add ground turkey to the skillet and cook for 5–7 minutes, breaking it apart as it browns.
  4. Stir in diced sweet potatoes, zucchini, smoked paprika, Italian seasoning, salt, and pepper. Cook for another 5–7 minutes until the vegetables begin to soften.
  5. Transfer the mixture to the prepared baking dish and spread evenly. Sprinkle shredded cheese over the top.
  6. Bake for 25–30 minutes until sweet potatoes are tender and cheese is melted and bubbly.
  7. Remove from oven, garnish with fresh parsley if desired, and serve warm.
