- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup unsalted butter, softened
- 2 tablespoons granulated sugar (plus extra for rolling)
- 2 tablespoons brown sugar
- ⅓ cup creamy peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 18 mini Reese’s Peanut Butter Cups
- ¼ cup chocolate chips
- 1 tablespoon butter
- 36 candy eyes
Instructions
- Preheat your oven to 350°F.
- In a small mixing bowl, whisk together the flour, baking soda, and salt.
- In a larger bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy.
- Mix in the peanut butter, then add the egg and vanilla extract, beating until smooth.
- Gradually stir the flour mixture into the wet ingredients until just combined.
- Divide the dough into 18 equal portions and roll each into a ball, then coat in extra granulated sugar.
- Place the cookie balls on a baking sheet, leaving 2 inches between them, and bake for about 10 minutes.
- Press an indentation into the center of each cookie after removing them from the oven.
- Melt chocolate chips and 1 tablespoon of butter over low heat until smooth.
- Place a mini Reese’s in the indentation on each cookie, drizzle melted chocolate over the Reese’s, and add candy eyes.
Notes
