- 1 cup fresh pineapple, diced (or canned, drained)
- 1 cup bell peppers, thinly sliced
- 1/2 cup red onion, thinly sliced
- 4 large tortillas (flour or whole wheat)
- 1/4 cup mayonnaise
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon garlic powder
Instructions
- Make the Sauce: In a small bowl, mix together the mayonnaise, soy sauce, honey, and garlic powder until smooth.
- Prepare the Filling: In a large bowl, combine the shredded chicken, diced pineapple, bell peppers, and red onion. Toss everything together until well mixed.
- Assemble the Wraps: Lay out a tortilla on a flat surface, spoon a generous amount of the chicken filling onto the center, and drizzle with the prepared sauce.
- Wrap It Up: Fold in the sides of the tortilla, then roll it tightly from the bottom up.
- Heat the Wraps (optional): Place the wraps seam-side down on a skillet over medium heat and cook for 2-3 minutes on each side until golden brown.
Notes
For a little kick, try adding some sriracha or a splash of lime juice to the sauce. Use rotisserie chicken to save time.
