Ingredients

  • 3 ripe bananas, mashed (about 1 1/2 cups)
  • 2 cups rolled oats (or quick oats)
  • 2 large eggs, room temperature
  • 1/4 cup natural peanut butter or almond butter (softened)
  • 2 tablespoons honey or maple syrup (optional, for extra sweetness)
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 1/4 cup dark chocolate chips or chopped nuts (optional)
  • 1 tablespoon chia seeds or flaxseed (optional, for extra texture)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking tray or a muffin tin with paper liners or lightly grease it.
  2. Mash the ripe bananas in a large bowl until mostly smooth with a few small lumps.
  3. Add the eggs, nut butter, honey (if using), and vanilla. Stir until the mixture looks glossy and combined.
  4. In another bowl, mix the oats, baking powder, cinnamon, and salt.
  5. Pour the dry mix into the wet mix and stir until just combined. Fold in chocolate chips or nuts if desired.
  6. Spoon the batter into the prepared tin or drop rounded tablespoons onto the tray for cookies.
  7. Bake for 12-20 minutes, depending on size. They should be golden at the edges and spring back slightly when touched.
  8. Let cool for 5 minutes in the tin, then move to a rack to cool completely.

Notes

Use unsalted butter or nut butter if a recipe calls for butter; measure oats by spooning into the cup and leveling.
