Instructions
- Peel and grate the sweet potatoes using a box grater or food processor.
- Place grated sweet potatoes in a clean kitchen towel and squeeze out moisture.
- In a medium bowl, mix the grated sweet potatoes, chopped onion, olive oil, garlic powder, salt, and pepper.
- Heat a large skillet over medium heat, adding a little olive oil to coat the bottom.
- Add the sweet potato mixture to the skillet and press down to form an even layer.
- Cook for about 5-7 minutes until the bottom is golden brown and crispy.
- Carefully flip the hash browns and cook for another 5-7 minutes until the other side is crispy.
- Remove from heat, sprinkle with fresh herbs, and serve warm.
Notes
