Ingredients
1 lb Italian sausage (mild or spicy)
1 small onion, diced
3 cloves garlic, minced
4 cups potatoes, diced (Yukon Gold or Russet)
4 cups chicken broth
1 cup heavy cream or half-and-half
2 cups kale or spinach, chopped
½ tsp salt
½ tsp black pepper
¼ tsp crushed red pepper flakes (optional)
1 tbsp olive oil (if needed)
½ cup grated Parmesan cheese
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent (3–4 minutes). Stir in garlic and cook 1 more minute.
2. Add sausage and break it apart with a spoon. Cook until browned and fully cooked.
3. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat to a simmer. Cook for 15–20 minutes or until potatoes are fork-tender.
4. Stir in heavy cream and chopped kale/spinach. Let it simmer for another 5 minutes until greens are wilted and bright.
5. Taste and season with salt, pepper, and red pepper flakes.
6. Ladle into bowls and garnish with grated Parmesan cheese before serving.
Notes
Swap kale with spinach for a milder flavor.
Use turkey or plant-based sausage for lighter or vegetarian options.
To thicken the soup, mash some of the potatoes before adding cream.
