- 12 oz. pasta (fettuccine or tagliatelle recommended)
- 1 lb. ground beef (preferably grass-fed)
- 2 tbsp. olive oil (extra virgin for superior taste)
- 3 cloves garlic (minced)
- 1 cup heavy cream (room temperature)
- 1 cup beef broth (low-sodium)
- ½ cup grated Parmesan cheese (freshly grated)
- Salt and black pepper (to taste)
- Fresh parsley (finely chopped, for garnish)
- Additional Parmesan cheese (for serving)
Instructions
- In a large pot, bring salted water to a rolling boil. Add the pasta and cook until al dente; follow package instructions. Reserve 1 cup of pasta water and strain the rest.
- In a large skillet over medium heat, add the olive oil. Once heated, add the ground beef, breaking it apart with a wooden spoon. Sauté until browned, about 5–7 minutes.
- Stir in the minced garlic and cook for an additional minute, until fragrant and lightly golden.
- Carefully pour in the beef broth, scraping the bottom of the skillet to deglaze and capture all flavors. Allow it to simmer for 3 minutes.
- Gently stir in the heavy cream. Reduce heat to low, allowing the mixture to thicken slightly, about 2-3 minutes.
- Add the cooked pasta directly to the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to achieve a creamy consistency.
- Stir in the grated Parmesan cheese until melted and smoothly integrated. Season with salt and pepper to taste.
Notes
For an elegant presentation, twirl the pasta into nests and garnish with parsley and freshly grated Parmesan. A drizzle of olive oil adds an extra touch of luxury.
