Ingredients
2 cups Kodiak pancake mix (or any high-protein mix)
1 lb ground sausage, browned and crumbled
2 cups milk (Fairlife recommended for extra protein)
2 large eggs
1/4 cup maple syrup
1 cup shredded cheddar or Colby Jack cheese
Instructions
1. Preheat your oven to 400°F (200°C).
2. Spray a mini muffin tin generously with non-stick cooking spray.
3. In a large bowl, whisk together pancake mix, milk, eggs, and maple syrup until smooth.
4. Fold in cooked sausage and shredded cheese gently until evenly distributed.
5. Pour batter into muffin cups, filling each about 3/4 full.
6. Bake for 15 minutes or until golden brown and firm to the touch.
7. Allow to cool for 5 minutes before removing from tin.
