A warm, comforting dish featuring ground beef and veggies topped with crispy tater tots and melted cheddar cheese.

- 1 lb (450 g) ground beef (or ground turkey)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
- 1/2 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 1 (32 oz) bag frozen tater tots (about 4 cups)
- 1 1/2 cups shredded cheddar cheese
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add chopped onion and cook for 3–4 minutes until soft.
- Add minced garlic and cook for 30 seconds. Then add ground beef and cook until no pink remains, about 6–8 minutes. Drain excess fat.
- Stir in cream of mushroom soup, ketchup, Worcestershire sauce, and frozen vegetables. Season with salt and pepper, and simmer for 2–3 minutes.
- Spread the meat mixture evenly in the prepared baking dish.
- Arrange frozen tater tots in a single layer over the filling, then sprinkle with shredded cheddar.
- Bake uncovered for 25–30 minutes until the tots are golden and cheese is bubbly. Broil for 1–2 minutes for extra crisp.
- Let the casserole rest for 5–10 minutes before serving.
Notes
Use unsalted butter or olive oil for sautéing if preferred. Canned soup can be swapped for a homemade white sauce to control sodium.
