Description

A warm, comforting dish featuring ground beef and veggies topped with crispy tater tots and melted cheddar cheese.


Ingredients

  • 1 lb (450 g) ground beef (or ground turkey)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 (32 oz) bag frozen tater tots (about 4 cups)
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook for 3–4 minutes until soft.
  3. Add minced garlic and cook for 30 seconds. Then add ground beef and cook until no pink remains, about 6–8 minutes. Drain excess fat.
  4. Stir in cream of mushroom soup, ketchup, Worcestershire sauce, and frozen vegetables. Season with salt and pepper, and simmer for 2–3 minutes.
  5. Spread the meat mixture evenly in the prepared baking dish.
  6. Arrange frozen tater tots in a single layer over the filling, then sprinkle with shredded cheddar.
  7. Bake uncovered for 25–30 minutes until the tots are golden and cheese is bubbly. Broil for 1–2 minutes for extra crisp.
  8. Let the casserole rest for 5–10 minutes before serving.

Notes

Use unsalted butter or olive oil for sautéing if preferred. Canned soup can be swapped for a homemade white sauce to control sodium.
