- Prepare the Batter: In a mixing bowl, combine the flour, baking powder, sugar, and salt. Whisk until well incorporated. In a separate bowl, mix the milk, egg, and melted butter. Gradually add the wet ingredients to the dry mix, stirring gently until just combined to maintain a tender muffin texture.
- Create the Sauce: In a small bowl, blend the maple syrup and vanilla extract until smooth.
- Cook the Muffins: Heat a non-stick skillet over medium-low heat. Pour a generous ¼ cup of batter onto the skillet for each muffin. Cook until bubbles form on the surface, about 2-3 minutes, then carefully flip and cook until golden brown. Repeat with remaining batter.
- Assemble the Muffins: Layer one muffin half with a slice of cheddar cheese, two slices of bacon, and drizzle with the maple sauce. Cap with the other muffin half and toast briefly in the skillet to melt the cheese, if desired.
Notes
Allow muffins to cool before storing in an airtight container for up to three days. Reheat in a skillet or microwave.
