  • 1 cup all-purpose flour
  • 1/2 cup honey (preferably raw)
  • 1 cup milk (room temperature)
  • 1/4 cup unsalted butter (room temperature)
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (room temperature, for maple butter)
  • 1/4 cup pure maple syrup (for maple butter)

Instructions

  1. In a bowl, combine the rolled oats with the milk. Let them soak for 30 minutes.
  2. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a large mixing bowl, beat the room temperature butter and honey until creamy.
  4. Add the eggs to the butter-honey mixture, one at a time, mixing until fully incorporated.
  5. Gradually stir in the soaked oatmeal and the dry mixture, mixing just until combined.
  6. Pour the batter into a greased loaf pan and smooth the top. Bake at 350°F (175°C) for 45-50 minutes.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

To maintain freshness, wrap the cooled bread tightly in plastic wrap or aluminum foil. Store it at room temperature for up to three days or refrigerate for up to a week.
