- 4 cups fresh or frozen corn (thawed if frozen)
- 1 cup heavy cream
- 1 cup whole milk
- 3 large eggs, beaten (room temperature)
- ½ cup honey (preferably local)
- 4 tablespoons unsalted butter (melted)
- 1 teaspoon vanilla extract
- 1 cup panko breadcrumbs
- 2 tablespoons fresh chives (finely chopped)
- Sea salt and black pepper (to taste)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the corn, heavy cream, whole milk, and beaten eggs. Stir until well blended.
- In a separate bowl, whisk together the honey, melted butter, and vanilla extract. Pour this mixture into the corn base and mix thoroughly.
- Add sea salt and black pepper to taste. Pour the mixture into a greased 9×13-inch baking dish and smooth the top.
- In a small bowl, combine the panko breadcrumbs and chopped chives. Sprinkle this mixture evenly over the corn base.
- Bake for 35-40 minutes, or until the top is golden and crispy.
Notes
For a gourmet twist, substitute honey with maple syrup and add cheese for an indulgent crust.
